50 ml Olive Oil
1 White Onion Finely Diced
1 Garlic Clove, Thinly Sliced
2 Bay Leaves
2 Large Red Peppers, Seeded And Finely Diced
2 Ripe Tomatoes Peeled, Seeded And Diced



Heat the oil add the onion, garlic and bay leaves;

Add the red pepper and cook for 30 minutes further;

Add the tomato and continue to cook for 1 hour and 15 minutes;
